A surface that has to work
Kitchens ask a good deal of a splashback. Fat spits, steam carries grease upward, and everything eventually lands on the wall behind the hob. A fired glaze handles all of it without absorbing anything, and gloss makes the cleaning easier because nothing keys into the surface.
